A friend of mine recently called me for some recipe intervention. She had been given some smoked sausage and was at odds as to what to do with it. Her family doesn’t normally eat kielbasa or any kind of smoked sausage.

My response was “Bean and Sausage Soup!” It’s a very tasty, hearty soup (almost the consistency of a stew) that goes wonderfully with some hot biscuits. Although the ingredient list is simple, this soup does take some time to pull together since the dried beans have to soak overnight and the soup needs to simmer in total for 3+ hours.  Therefore plan to make this soup when you are hanging about the house for a few hours. It doesn’t need a lot of attention, just time, but you will find it’s well worth it.
