Garlic Mashed Potatoes

Garlic mashed potatoes are a nice change and particularly good with the Breaded Pork Chops, as a topping for Shepherd’s Pie or with the Pork Tenderloin with Mushroom Cream Sauce. This recipe is a nice ‘short cut’ recipe for garlic mashed potatoes making it a perfect weekday side dish.

Ingredients:

  • 6 large Yukon Gold potatoes, peeled
  • 2 heaping tbsp unsalted butter
  • 3 large cloves of garlic, finely minced
  • 1/2 cup milk or cream
  • 1/2 tsp garlic powder
    kosher salt (to taste)
  • (optional) 1/4 cup parmesan cheese

Fried Mashed Potatoes
    1. Peel and cut potatoes in half lengthwise, then lengthwise again,  then into 3rds or slightly smaller cubes.

    2. Place into a very large pot, cover completely with cold water and salt the water with 2 tsp of kosher salt. Cover and bring to a boil on high heat.

    3. As soon as it starts to boil turn down the heat to medium or medium-low to prevent it from boiling over. Continue to boil for 20 minutes or until you can easily break the larger pieces of potatoes with a fork.

    4. Take off the heat and immediately strain all the water and cover. Using an electric mixer, lightly mash up the potatoes. Cover and set aside.

    5. In a small frying pan, heat up the butter on medium-low heat and add the garlic.  Cook the garlic for 1 minute – DO NOT BROWN. Add the milk to the pan and cook for another minute. Pour the milk and garlic mixture on the whipped potatoes and continue to mix with the electric mixer.  Optional – add the parmesan cheese and mix again. Taste and salt as desired.

Mashed potatoes are so easy to make and can definitely be managed in the short time you have to get dinner on the table. The key is to have the potatoes peeled ahead of time.

The night before, peel the potatoes and place the whole peeled potato in a bowl of water. Ensure each potato is covered in water as the exposed areas will start to brown. Cover and place in the refrigerator. When you are ready to start preparing your meal it only takes 5 minutes to drain and chop your potatoes and get the potato pot on the stove.
