This is another dish that uses the marinara sauce as the base sauce. Simple to make, yet incredibly tasty and hearty – this is a favourite in our family when peppers are in season.

Ingredients:

• 3 tbsp olive oil
• 1 medium sized onion, diced
• 2 large cloves of garlic, finely chopped
• 4 hot Italian sausages, casings removed
• 4 very large basil leaves, julienned
• 1/2 cup chicken broth
• 3 large red peppers, julienned
• 1 portion or 4 cups marinara sauce
• 1 tsp kosher salt
• 6 grinds of pepper
• 2 x 500 g packages fresh gnocchi

  1. In a large saucepan,  heat up the olive oil on medium-low heat and sauté the onion for approximately 5 minutes or until soft.
  2. Add the garlic and sauté another minute.
  3. Add the hot Italian sausage and mash up with a potato masher. Cook for 3-5 minutes or until lightly browned.
  4. Add the fresh basil and cook for 1 minute to release the oils. Add the chicken broth and cook on medium-high heat for 3 minutes or until  reduced in half.
  5. Add the julienned peppers, mix well and cook for 2 – 3 minutes.
  6. Add the marinara sauce, salt and pepper and mix well. Cook for 7-10 minutes, stirring occasionally.
  7. While the sauce is cooking, heat up a large pot of water, salt with 2 tsp salt and boil the gnocchi according to the package instructions (typically fresh gnocchi boils in 3 minutes).
  8. Drain the gnocchi, add to the sauce, gently mix and let sit, covered, for 5 minutes.  Serve with freshly grated Parmesan cheese on top.
This recipe can easily be managed as a part of a weeknight meal option. The night before, cut up the onion, garlic and red peppers, place in an air-tight container and refridgerte. When you come home from work, start the recipe. While the onions are cooking, julienne the basil and get the pot ready for the gnocchi. In 30 minutes you should be able to pull it all together for a fantastic main dish!
