Simple yet tasty, this is a family favourite for a weekday dinner. The flavouring for this recipe comes from the Herbed Breadcrumbs so make sure you have this ingredient on hand.

Ingredients:

• 6 boneless pork chops
• kosher salt, ground pepper and garlic powder for sprinkling
• 2 eggs, beaten
• 1 tbsp. milk
• 1 1/2 cups toasted herbed breadcrumbs

  1. The instructions below take you through the creation of the entire dish in one cooking session.
  2. Preheat oven to 375 F. Rinse the pork chops and pat dry with a paper towel. Prepare a baking sheet by lining it with aluminum foil.
  3. Sprinkle kosher salt, pepper and garlic powder on both sides of each pork chop.
  4. Mix the beaten eggs and milk and place in a shallow wide bowl (large enough to place one of the pork chops in).  Add the herbed breadcrumbs to another large shallow bowl.
  5. Place the pork chop in the egg mixture and flip it over to the other side so that you coat the entire pork chop with the egg mixture.
  6. Next place the pork chop in  the breadcrumbs and flip to the other side. Completely coat the pork chop in the breadcrumbs. Place on the cookies sheet.
  7. Bake for 30 minutes or until the pork is cooked through and the crumb coating starts to crisp up.

This main is easily a weekday meal option provided you’ve done a little preparation.  The night before clean and dry the pork chops and place in the refrigerator.  Crack open the 2 eggs, add the milk, whisk together with a fork and place in an airtight container in the refrigerator.

When you get home, take the pork chops and egg mixture out of the refrigerator and give the egg mixture another stir. Place it in the shallow bowl and get the herbed breadcrumb mixture ready as well. Follow this with the preparation of your baking tray and the preheat of the oven. In a matter of minutes you are ready to start prepping the pork chops to place on the baking sheet.

This meal solution calls for the Breaded Pork Chops to be paired with Garlic Mashed Potatoes and Glazed Carrots. It assumes that the following preparation has already been completed:

– pork chops are clean and dry and both the egg mixture and herbed breadcrumbs are ready for dipping
– potatoes have been peeled and are sitting in a bowl of water
– carrots have been peeled and sliced and are in an air tight container

In this meal, the potatoes will take the longest time to cook and will retain its heat the best. Therefore we will start with the preparation of the potatoes.

  1. Remove the peeled potatoes from the bowl of water, shake off excess water and cut each potato in half lengthwise, each half down the middle and then into thirds to give you six chunks for each half of the potato. Add to a large pot, cover in cold water and add roughly 2 tsp of kosher salt. Cover and place on high heat to quickly bring to a boil.
  2. While you are waiting for the potatoes to start to boil, start the oven to preheat for the pork chops and cover the baking sheet for the pork chops with aluminum foil. Proceed to prep the pork chops with the bread crumb coating and place on the aluminum foil lined baking sheet. Place in the oven and set the oven timer to 30 minutes.
  3. By this time the potatoes should be boiling. Turn the heat down to medium and continue to boil until tender, roughly 20 minutes.
  4. Add the prepared carrots to a medium sized pot and set on a burner, but do  not turn on yet. Fill the kettle with water and bring to a boil.
  5. When your kitchen timer is at 15 minutes, add the boiled water to the carrots to completely cover the carrots. Place on high heat and bring to a boil. Cook and prepare according to the Glazed Carrots recipe. Set aside.
  6. At this time the potatoes should be cooked. With a fork, test to make sure they are soft throughout and easily break apart. Drain, and continue to prepare the potatoes according to the Garlic Mashed Potatoes recipe.
  7. By this time the timer for the pork chops should go off. Remove from the oven and set the baking pan on some hot pans. The pork chops will stay hot on the tray for a good 5-10 minutes if needed.
